Flightless Bird
I am unable to have attachments appear as a "subject" in the email or in that
area. They now appear in the body of the email. Also when r clicking it
used to give the option to add as attachment but now it only gives the option
to save to DVD. I have to open the doc to get it to attach. I'd rather r
click the icon and then have Outlook create a new email.
It's probably something so simple but it's got me beat.

From which program and version to which version of Outlook?

Do you mean you get an icon and file name in the body? If so, you are in
rich Text. Try HTML or Plain Text format.
