Hello,
If I understood your system correctly, then please consider this approach.
Your dossier would be a notebook.
You should then create 31 sections for each day.
By using tags, you can differentiate between discussions, thoughts,
tasks,... and by changing views, you can filter this information (also by
done/not done status for tasks).
Under each section, you can have more granularity by using pages and subpages.
Of course, if needed, you can create more than 31 sections to hold different
parts of needed material, like photos, emails,... although I would recommend
just keeping links to this kind of stuff on your file system.
