When installing Office 2007, are mail folders and messages from our current
Outlook 2003 converted over to Outlook 2007 or are they history? Would
appreciate any advice.

Uninstalling an app or upgrading does not impact on data, but a backup of
data files is allways wise

When you upgrade from Office 2003 to Office 2007, the prior Outlook.pst file
{which contains your prior mail folders and messages} is converted to
Outlook 2007 format. I do nor recall if the conversion occurs during
installation or on first use of Outlook 2007. I think the later.

Even so, data back up is still a good idea.

Files for Office apps other than Outlook are not converted, but left in the
format of the previous version. You can open and save these files with
Office 2007 - they will open in "Compatibility mode." You can choose to save
them in that mode, or in 2007 format (.docx, .xlsx, etc.).
