I purchased an HP laptop with a pre-installed 60day trial version of Office
2007. I then purchased a copy of Office Professional 2007 and installed it.
Yet the trial version still seems to be THE version the PC uses. Word etc is
using the trial version as on opening a document (TRIAL) is shown at top of
page. Any ideas on how to get it to recognise the new version and drop the
trial?

Some research would have told you to uninstall both the Trial version AND
the Activation assistant and do a re-boot before installing your paid-for
version.
You now need to uninstall all three, Trial, Activation Assistant AND your
paid-for version, re-boot and re-install your paid-for version.
