Bit of oddness using Win 7 Pro x64

Got an odd little problem here under Win 7 Pro x64. I use Everest
Ultimate, ver. 5.30.1900, have the OSD set up like I want, and it works
fine. But on bootup, most of the time only the first 5 items of the OSD
show. I can go to Configure, make any change, click Apply then the full
list appears. On rare occasions, W7 will boot with the full OSD list
showing.
Another thing I thing that might be related (as a W7 oddity that causes the
first glitch), is the nVidia Control Panel will NOT load a saved preset to
set GPU fan speed when it boots. So every time I boot the system, I have to
either run NV Profile (CTL-ALT-H opens it) and load the profile myself, or
open the nVidia control panel, Performance, and set GPU fan to Manual
control and the speed, OK, close, it executes and fan speed increases
(default speed of 45% is not enough in 85F ambient). I close the NV control
panel, and it asks me if I want to apply this on Windows Startup. I click
YES, but may as well have clicked NO. Because on boot, fan speed is always
Default (45%).
When I installed W7, some of the first things I did before installing any
software are:
Disable Defender
Disable UAC
Disable Indexing
Disable Windows Autoupdater
Disable ALL Remote crap
Yes I do know to be sure and execute the driver and program installers by
right click "Run As Administrator" and do so.

So, any ideas how to fix these two little glitches? I don't get these
problems with XP Pro x64 SP2 at all. Ever.

M$ did create a great OS with Win 7. And also created a number of irksome
ways to screw it up!

TIA

Well Defender has been superseded by Security Essentials, so not really
relevant.
I haven't had any issues with UAC, Indexing, or Autoupdate which in any case
I amended to Critical only.
I don't believe Nvidea Control Panel works correctly in win7 64 bit, at
least many of the options that were available in NVidea dual monitor options
are no longer available.

I agree that the nVidia control panel doesn't behave quite as expected in
Win 7. It behaves as it does in Vista Home Premium. Not as it does in XP
Pro x64.
I just found how to create and edit Profile Policies in the Performance
section. It should now load the needed profile on startup.
And it seems that Everest Ultimates behavior is somehow related to video
driver issue also. Eventually I expect that nVidia will iron out the kinks
in the drivers.
Thanks for the response DL!

Re: Bit of oddness using Win 7 Pro x64 - Update

nVidia Control Panel, Performance group, Profile Policies DOES load a saved
preset if a Rule is created to do it in the Profile Policies section. So
that one is cleared up.

I did a little more reading on Everest Ultimate 5.3 and learned that this
was the first release supporting Win 7. Several glitches in the interface
are reported in this version with Win 7 64 bit. These may have been fixed
in the current release of 5.5
